SOLA LIME CHICKEN
2 lbs Boneless, skinless chicken breasts or breast filets
2t. SoLa Cajun Seasoning
4T Butter (not oleo)
2T Olive oil
Preheat large skill on medium for 2-3 minutes. Season chicken breasts or filets with SoLa Cajun Seasoning. Put butter and oil in heated skillet and add chicken. Cook 8-10 minutes on each side, turning often, until well browned. Squeeze limes for juice. Remove chicken from pan. Whisk lime juice into pan juices until blended. Return chicken breasts to skillet and baste with pan juices. Cover and reduce heat to low. Cook for 10-15 min. Serve with rice and mixed vegetables.
